Triple Berry Pie Recipe
Level: Beginner/Intermediate
Servings: One 9” pie (Don’t worry, I won’t make you also make 75 small pies)
Warning - I’m not a trained or professional chef and this is not my normal content. I don’t know how long it takes to make this from start to finish and I don’t care about the calories.
Ingredients:
Oat Crust
1 to 1 1/2 cups of oats (quick cook or old fashioned)
1/3 cup brown sugar
1/2 teaspoon salt
1/3 cup unsalted butter, melted
Spices - I added cinnamon, cloves, & cardamom. Measure with your heart (or about a couple teaspoons of each). You’ll know when it feels right.
Berry Filling
7 cups frozen berry mix - trust me, the frozen berries are just easier.
1 cup white sugar
1 Tablespoon lemon juice (at least). For an extra tart, berry lemonade vibe, add more lemon juice.
4 Tablespoons cornstarch
Strudel Topping
1 1/4 cup all-purpose flour
1/2 cup light brown sugar
1/3 cup white granulated sugar
1/4 teaspoon salt
Spices - I added Cinnamon. Again, measure with your heart (or about a couple teaspoons). You’ll know when it feels right.
6 tablespoons unsalted butter, melted
Salted Caramel
2 cups white granulated sugar
12 tablespoons unsalted butter. Let butter become room temp and cut into cubes before starting.
1 cup heavy cream. Let cream come up to room temp before starting.
1 to 2 teaspoons of flaky salt. I used “fleur de sel” sea salt flakes.
You can always just buy premade salted caramel sauce - don’t worry I won’t judge you.
